We go to together like avocado & literally everything! It's the happiest day of the year and we're celebrating this glorious fruit with some of our favorite avocado recipes.

You probably love avocados already unless you're (a) allergic to them or (b) crazy. It’s hard not to: They’re creamy, fresh, satisfying…we’re practically drooling just describing them. But they’re not just good—they’re also really good for you. In celebration of this fab holiday (National Avocado Day - July 31), we're sharing with you our favorite avocado recipes.



THE AVOCADO TOAST OF YOUR DREAMS
--- INGREDIENTS ---
- 1 large scrambled egg (farm fresh is best & don't overcook!)
[Pro tip: you can find farm fresh eggs on Facebook marketplace...for real.]
- ½ avocado (pitted & sliced)
[Pro tip: make sure it's ripe by squeezing it - should have some give to it!]
- 1 slice of thick-cut, toasted sourdough bread (fresh from the bakery section of the grocery store)
[Pro tip: Lund's and Byerleys is my go-to.]
- Salt & pepper
[Pro tip: fresh cracked pepper is the bomb!]
- Drizzle of good olive oil (the kind for salads, not for cooking)
[Pro tip: preferably of Spanish origin]

--- PUT IT ALL TOGETHER ---
Toast on the bottom (of course), scrambled eggs next, then topped with avocado slices. Finish with S+P and a drizzle of olive oil. ENJOY!


GUACAMOLE. ALL DAY, EVERY DAY.
--- INGREDIENTS ---
- 2 ripe avocados
- 2 tsp lime juice
- 2 Tbsp cilantro (chopped)
- 1/4 cup red onion (finely chopped)
- 1/2 jalapeño, including seeds (finely chopped)
- 1/4 tsp kosher salt

--- PUT IT ALL TOGETHER ---
Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside. Cut the avocado in half and remove the pit. Scoop the avocados and place in a medium bowl. Toss and coat with lime juice. Add the salt and using a fork, mash until smooth. Fold in the remaining ingredients and mix well. Taste the guacamole (over and over and over and over and...) and adjust seasoning if necessary. ENJOY!


AVOCADO & PISTACHIO ICE CREAM
--- INGREDIENTS ---
- 1 large avocado, pitted and peeled
- 1 (14oz.) can sweetened condensed milk
- 1 (3.4oz) package instant pistachio pudding mix
- 2 tbsp lemon juice
- 2 cups heavy whipping cream
- 1/2 cup shelled salted pistachios, chopped

--- PUT IT ALL TOGETHER ---
Combine the avocado, sweetened condensed milk, pudding mix and lemon juice in a blender or food processor. Blend until smooth. Meanwhile beat the heavy whipping cream until stiff peaks form. Fold in the pistachio mixture until fully combined, then stir in the chopped pistachios. Pour the mixture into a freezable container (like a 9x5" loaf pan). Freeze for at lease 4 to 6 hours, or overnight. Find the nearest patio and dig into a bowl full of this goodness. ENJOY!


THE BREAKFAST OF ROWING CHAMPS: AVOCADO, EGG & BACON
--- INGREDIENTS ---
- 1 medium Avocado
- 2 eggs
- 1 piece of cooked bacon, crumbled
- 1 Tbsp of low-fat cheese
- A pinch of salt

--- PUT IT ALL TOGETHER ---
Preheat oven to 425. Begin by cutting the avocado in half and removing the pit. With a spoon, scoop out some of the avocado so it's a tad bigger than your egg and yolk. Place in a muffin pan to keep the avocado stable while cooking. Crack your egg and add it to the inside of your avocado. Sprinkle a little cheese on top with a pinch of salt. Top with cooked bacon. Cook for 14-16 minutes. Serve warm & conquer the day! ENJOY!
